Easy Snacks For Picky Kiddos

I was totally that mom planning to feed Carter organic kale grown from my garden, make all his baby food myself, and I was convinced he would love veggies just as much as his mama....fast forward to now and most days I am happy if he just eats. ANYTHING. Bonus points if it is healthy.

I searched high and low for snacks that Carter would eat and I got pretty fed up with spending countless hours shopping for ingredients and spending time in the kitchen making snacks/dinners/etc that would just end up in the garbage. Plus, grocery shopping with two under two really wasn't near as fun as one might think ;) This post is sponsored by a product that certainly does make grocery shopping easier so stay tuned at the end to hear my thoughts on the Binxy Baby.

I compiled a list of our very favorite snacks that are always a hit and maybe your picky toddler will like these too!

1. Popsicles: This is the best way for me to sneak in some good stuff. Hemp seeds and avocado are a favorite of mine to add to popsicles because their flavor is so mild that Carter never notices. He is also a huge fan of greek yoghurt so I always add that because it has a pretty distinct flavor that hides some of the healthy items he might otherwise turn his nose up to. I can make a batch for the whole week in just a few minutes. This type of snack has so many variation options too, get creative! This week we did pineapple, squash, greek yoghurt and it was a hit! My go to recipe is: 

1 Banana + a couple scoops greek yoghurt + 1 tablespoon hemp seeds +  1 avocado

2. Peanut Butter O Clusters: These are great and super easy to make with only 2 (or 3 ingredients) I melt peanut butter in a pan then add enough cheerios that they are able to get entirely coated with the peanut butter mixture. Scoop into balls on parchment paper and place in the fridge, once solid, transfer to a tupperware container. If I have raw honey on hand I will add some of that, but otherwise I don't think it really needs it.

3. Banana Pancakes: This name is deceiving because these actually only have two ingredients (perfect for me, I am not betty homemaker) Mix eggs and mashed banana together, I use a food processor or something similar to mix it up and find they come out much fluffier this way. Pour these in a frying pan in pancake shape. No syrup needed!

1 banana + 2 eggs

4. HUMMUS: This one might come as a surprise, and if you told me to try hummus with my picky kid theres no chance I'd believe he would eat it. I talked to a few other picky kiddo moms and hummus seems to be a universal hit! Dips are always fun for kids, and sometimes Carter thinks hummus makes a great face mask or conditioner too.... I can even get Carter to eat cucumbers or carrots with his hummus! Try it, let me know what your picky kiddo thinks!

Now for the Binxy Baby! This nifty little cart hammock can hold up to 50 pounds! These are great to use before you have an unassisted sitter (so up to 6-8 months) or if you have two kids! It is safety tested and fits most standard grocery carts. It is simple to snap on and Brody was really loving to look around. Before the Binxy Baby I was often keeping Brody in the car seat which takes up the ENTIRE cart, where does one put the groceries? So this hammock leaves the bottom of the cart available for all those snack ingredients ;) Overall it is a neat product and I think it would make a great baby shower gift as well!
